GRATED CUCUMBER AND COURGETTE
I was looking for a way to use up our courgette crop and came across this recipe. It’s actually really simple and a great alternative for usual dinner veg.
Ingredients (for 4 people)
1 courgette, 1 cucumber, 100ml of single cream, salt, pepper, fresh basil.
1. Grate both cucumber and courgette( both can be grated with the skin once it is well washed)
2. Place both on the frying pan and simmer for 5min
3. Add on the single cream, mix well and leave for another 2 min
4. Season with salt, paper and fresh basil and it’s ready to serve!
BEETROOT AND GOAT CHEESE SALAD WITH SAUSAGES AND PITA BREAD
Ingredients (for 2 people)
2 large beetroots, 100g of hard goats cheese(or more if you like cheese) rocket leaves, pine nuts, olive oil, salt and pepper.
This is a simple salad, great for anyone that likes beetroot. You just put all the ingredients together and enjoy it on its own or as a side dish to your dinner. We prepared it with some sausages and pita bread and was surprisingly delicious!
